- 1 tsp vanilla extract
Additional:
- 1 cup fresh or frozen blueberries
- Optional: coarse sugar for topping
Instructions
- Preheat oven: Preheat the oven to 400°F (200°C) and prepare a muffin tin with liners or by greasing lightly.
- Mix dry ingredients: In a medium bowl, whisk together flour, sugar, salt, and baking powder.
- Combine wet ingredients: In another bowl or measuring cup, mix oil, egg, vanilla, and milk.
- Combine wet and dry ingredients: Add the wet ingredients to the dry ingredients and stir until just combined; avoid overmixing.
- Add blueberries: Gently fold in the blueberries.
- Fill muffin cups: Divide the batter evenly among the muffin cups, filling each about ¾ full.
- Add topping: Optionally, sprinkle the tops with coarse sugar for added crunch.
- Bake: Bake for 18–20 minutes or until a toothpick inserted comes out clean.
- Cool and serve: Allow the muffins to cool in the pan for 5 minutes, then transfer to a wire rack to cool further.
