  • 1 tsp vanilla extract

Additional:

  • 1 cup fresh or frozen blueberries
  • Optional: coarse sugar for topping

Instructions

  1. Preheat oven: Preheat the oven to 400°F (200°C) and prepare a muffin tin with liners or by greasing lightly.
  2. Mix dry ingredients: In a medium bowl, whisk together flour, sugar, salt, and baking powder.
  3. Combine wet ingredients: In another bowl or measuring cup, mix oil, egg, vanilla, and milk.
  4. Combine wet and dry ingredients: Add the wet ingredients to the dry ingredients and stir until just combined; avoid overmixing.
  5. Add blueberries: Gently fold in the blueberries.
  6. Fill muffin cups: Divide the batter evenly among the muffin cups, filling each about ¾ full.
  7. Add topping: Optionally, sprinkle the tops with coarse sugar for added crunch.
  8. Bake: Bake for 18–20 minutes or until a toothpick inserted comes out clean.
