Delicious Lemon Zucchini Bars are a perfect blend of zesty lemon flavor and moist zucchini, topped with a sweet glaze. These bars are a delightful treat for any occasion.

Dry Ingredients:
- 1 ½ cups all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
Wet Ingredients:
- ½ cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- ½ cup plain yogurt or sour cream
- 1 cup grated zucchini, lightly squeezed
- ½ cup fresh lemon juice
- 1 tablespoon lemon zest
Glaze:
- 1 ½ cups powdered sugar
- 2–3 tablespoons milk or lemon juice
Instructions
- Preheat Oven: Preheat oven to 350°F (175°C) and grease/flour an 8×8 inch baking pan.
- Mix Dry Ingredients: In a medium bowl, whisk flour, baking powder, baking soda, and salt.
- Cream Butter & Sugar: In a large bowl, cream butter and sugar until fluffy.
- Add Eggs & Vanilla: Beat in eggs one at a time, then add vanilla.
- Mix Wet Ingredients: In a small bowl, combine yogurt/sour cream and lemon juice.
- Combine Ingredients: Alternate adding dry and wet mixtures to the creamed butter/sugar. Fold in zucchini and lemon zest.
- Bake: Pour batter into pan and bake for 30-35 minutes.
- Cool & Glaze: Cool bars in pan, then glaze with a mixture of powdered sugar and milk/lemon juice.
- Serve: Allow glaze to set before cutting bars into squares.
Notes
- For a citrusy twist, add a little extra lemon zest to the batter.
- These bars can be stored in an airtight container for up to 3 days.
