Ingredients
Scale
Brownie Cookies
- 1 18.4 oz dry brownie mix
- 2 large eggs
- ½ cup vegetable oil
- 1 tablespoon water
Ice Cream Filling
- Edy’s® Slow Churned® Vanilla Light Ice Cream (as needed)
- Edy’s® Original Rocky Road Ice Cream (as needed)
Instructions
- Preheat and prepare: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper to prevent sticking and for easy cleanup.
- Mix the brownie dough: In a large mixing bowl, combine the dry brownie mix, eggs, vegetable oil, and water. Mix thoroughly until the batter is smooth and well incorporated.
- Scoop and bake: Using a cookie scoop or tablespoon, drop 1 ½ tablespoon-sized balls of batter onto the prepared baking sheet, spacing them evenly. Bake for 10-12 minutes until the cookies are set but still soft in the center.
- Cool completely: Remove the baking sheet from the oven and transfer the cookies to a wire rack. Let them cool completely to ensure the ice cream doesn’t melt when assembling.
- Assemble the sandwiches: Once the cookies have cooled, take one cookie and place a large scoop of Edy’s® Slow Churned® Vanilla Light or Original Rocky Road Ice Cream on the flat side. Top with another cookie, pressing gently to spread the ice cream evenly.
- Freeze before serving: Place the assembled ice cream sandwiches on a tray and freeze them for about 30 minutes to firm up before serving for the best texture and taste.
- Enjoy: Serve chilled and enjoy your delicious homemade brownie cookie ice cream sandwiches!
Notes
- For softer cookies, slightly underbake by a minute or two.
- You can substitute the ice cream flavors for your favorites.
- Store assembled sandwiches in an airtight container in the freezer for up to 3 days.
- For easier scooping, allow the ice cream to soften slightly before assembling.
- Make sure cookies are completely cool to prevent ice cream melting during assembly.
