Ingredients

Scale

Ground Beef Mixture:

  • 1 ½ lbs ground beef (or ground turkey)
  • 1 medium onion, finely chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon black pepper
  • ½ teaspoon salt
  • 1 tablespoon Worcestershire sauce
  • ½ cup sliced mushrooms
  • 1 cup frozen mixed vegetables
  • ½ teaspoon smoked paprika
  • ½ cup crispy bacon bits

Layering:

  • 4 medium potatoes, thinly sliced

Sauce:

  • 1 can (10.5 oz) cream of mushroom soup
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup shredded cheddar cheese
  • ½ cup milk or beef broth

Instructions

  1. Prepare the Ingredients: Peel and thinly slice the potatoes. Finely chop the onion. Pre-cook ground beef in a skillet over medium heat until browned, then drain excess grease.
  2. Layer the Ingredients in the Slow Cooker: Grease the slow cooker with cooking spray or a liner. Add a layer of sliced potatoes at the bottom. Sprinkle half the onions and half the ground beef over the potatoes. Season with garlic powder, onion powder, salt, and pepper. Repeat layers until all ingredients are used.
  3. Prepare the Sauce: In a bowl, mix together cream of mushroom soup, cream of chicken soup, milk (or broth), Worcestershire sauce, and paprika. Stir until smooth and pour evenly over the casserole layers.
  4. Cook the Casserole: Cover and cook on LOW for 6-8 hours or on HIGH for 4 hours until the potatoes are tender.
  5. Add the Cheese: In the last 30 minutes of cooking, sprinkle shredded cheddar cheese on top. Cover and let the cheese melt before serving.
  6. Serve & Enjoy: Scoop onto plates or bowls and garnish with fresh parsley or green onions. Serve with a side of bread, coleslaw, or roasted vegetables.
