Ingredients
Scale
Ham and Rub
- ½ cup brown sugar
- 1 teaspoon ground mustard
- 1 6-8 lb bone-in ham
- 1 cup pineapple juice (for slow cooker)
Glaze
- 1 cup pineapple juice
- 1 tablespoon cornstarch
- ½ cup reserved ham juices
- 2 tablespoons brown sugar
Instructions
- Prepare the brown sugar rub: In a medium bowl, combine ½ cup brown sugar and 1 teaspoon ground mustard. Stir well to create a smooth mixture.
- Prepare the ham: Unwrap the 6-8 lb bone-in ham and place it in a 6-quart slow cooker, trimming if necessary to fit. Rub the brown sugar and mustard mixture all over the surface of the ham, coating it evenly.
- Add pineapple juice and cook: Pour 1 cup pineapple juice into the slow cooker around the ham. Cover with the lid and cook on low heat for approximately 4 hours, or until the internal temperature reaches 140°F, indicating the ham is heated through and ready.
- Prepare the glaze mixture: While the ham cooks, whisk together 1 cup pineapple juice and 1 tablespoon cornstarch in a medium saucepan until smooth.
- Strain and add ham juices: Strain the cooking juices from the slow cooker and reserve ½ cup. Add these reserved ham juices to the pineapple juice and cornstarch mixture in the saucepan.
- Cook the glaze: Bring the saucepan to a simmer over medium-high heat, stirring frequently. Continue cooking until the glaze thickens to a glossy consistency.
- Adjust sweetness and consistency: Taste the glaze and add 1-2 tablespoons of brown sugar as needed to balance the sweetness. If too salty, add a couple of tablespoons of water. To thicken more, mix additional water and cornstarch and stir into the glaze.
- Glaze and serve: When the ham is fully cooked, brush the pineapple brown sugar glaze over the ham before slicing and serving.
Notes
- Make sure the ham reaches an internal temperature of 140°F for safety and optimal taste.
- If your ham is larger or smaller than 6-8 lbs, adjust cooking times accordingly (about 20 minutes per pound).
- You can prepare the glaze ahead of time and reheat gently before serving.
- Trim excess fat from the ham before cooking if desired to reduce greasiness.
- Leftover ham and glaze can be stored in the refrigerator for up to 5 days.
