Veggies and Broth:

  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1/2 yellow onion, sliced
  • 3 cups low-sodium chicken broth

Cheese and Pasta:

  • 8 ounces cream cheese, cubed
  • 1 cup shredded Parmesan cheese
  • 12 ounces penne or rotini pasta

Garnish:

  • Fresh parsley
  • Extra Parmesan cheese
  • Crushed red pepper flakes

Instructions

  1. Rub chicken breasts: Season chicken with Cajun seasoning, garlic powder, paprika, salt, and pepper. Optional: marinate for 15–20 minutes.
  2. Cook chicken: Place seasoned chicken in slow cooker with bell peppers, onion, and broth. Cook on low 6–7 hours or high 3–4 hours.
  3. Shred chicken: Remove and shred chicken, then return to slow cooker.
  4. Add cheeses: Stir in cream cheese and Parmesan until melted and creamy. Cook an additional 10–15 minutes on low.
  5. Cook pasta: Cook pasta separately until al dente, then stir into the slow cooker mixture.
  6. Serve: Garnish with parsley, extra cheese, or red pepper flakes before serving hot.
