Ingredients
Scale
Beef and Vegetables
- 1 lb sliced ribeye or sirloin steak (or shaved beef)
- 1 bell pepper, sliced
- 1 onion, sliced
- 1 cup mushrooms, sliced
Pasta
- 12 oz fresh or frozen cheese tortellini
Sauce
- 4 oz cream cheese, softened
- 1 cup shredded cheddar cheese
- 1 1/2 cups beef broth
Optional Toppings
- Provolone cheese slices
- Mozzarella cheese
- Parmesan cheese
Seasonings (optional)
- Garlic (minced or powder)
- Worcestershire sauce
- Italian seasoning
Instructions
- Prep the beef: For richer flavor, brown the sliced steak or shaved beef in a skillet over medium-high heat until lightly browned. This step is optional but recommended.
- Layer ingredients in Crock Pot: Add the browned beef, sliced bell peppers, onions, mushrooms, beef broth, and any optional seasonings like garlic, Worcestershire sauce, or Italian seasoning into the slow cooker.
- Cook low and slow: Cover the Crock Pot and cook on low for 6 to 7 hours, or on high for 3 to 4 hours, until the beef is tender and vegetables have softened.
- Make it creamy: About 30 minutes before serving, stir in the softened cream cheese and shredded cheddar cheese into the Crock Pot until fully melted and the sauce is smooth and creamy.
- Add tortellini: Gently stir the fresh or frozen cheese tortellini into the Crock Pot. Cover and cook for an additional 20 to 30 minutes. Avoid overcooking to keep the pasta tender but firm.
- Finish with extra cheese: Just before serving, top the dish with provolone or mozzarella slices for an extra gooey, melty finish. Let sit for a few minutes to melt.
Notes
- Using shaved ribeye or sirloin gives the most authentic cheesesteak flavor.
- Add the tortellini towards the end of cooking to prevent it from becoming mushy.
- For more depth of flavor, consider adding garlic, Worcestershire sauce, or Italian seasoning.
- Double the shredded cheese for a richer, cheesier dish.
- Serve with warm garlic bread or a fresh side salad for a complete meal.
