Crispy Chicken Taquitos Recipe

  • Author: Zoe
  • Total Time: 30 minutes
  • Yield: 8 taquitos 1x

Description

These Crispy Chicken Taquitos are a delicious and easy-to-make snack or meal featuring shredded chicken and melted cheese wrapped in soft tortillas, baked to a golden crisp. Perfect for a quick dinner or party appetizer, they are served warm with toppings like sour cream, guacamole, and extra cheese.

Ingredients

Scale

Filling

  • 2 cups cooked shredded chicken (rotisserie chicken works great)
  • 4 oz cream cheese, softened
  • ½ cup shredded cheddar or Mexican blend cheese
  • ¼ cup salsa (mild or spicy)
  • ½ tsp garlic powder
  • ½ tsp chili powder
  • ½ tsp cumin
  • Salt and black pepper to taste

Assembly

  • 8 small flour or corn tortillas
  • Cooking spray or oil (for brushing)

To Serve

  • Chopped cilantro
  • Sour cream
  • Guacamole
  • Extra shredded cheese

Instructions

  1. Preheat Oven: Preheat your oven to 425°F (220°C). Prepare a baking sheet by lining it with parchment paper or lightly greasing it to prevent sticking.
  2. Mix Filling: In a large bowl, combine the shredded chicken, softened cream cheese, shredded cheddar or Mexican blend cheese, salsa, garlic powder, chili powder, cumin, salt, and black pepper. Mix thoroughly until all ingredients are well incorporated.
  3. Warm Tortillas: Place the tortillas in the microwave for about 20 seconds to make them pliable, which will help prevent cracking when rolling.
  4. Roll Taquitos: Spoon 2 to 3 tablespoons of the chicken filling onto one side of each tortilla. Roll each tortilla tightly around the filling to form a taquito.
  5. Arrange on Baking Sheet: Place each rolled taquito seam-side down on the prepared baking sheet to help them hold their shape during baking.
  6. Brush with Oil: Lightly brush the taquitos with oil or spray them evenly with cooking spray. This helps achieve a crispy and golden exterior.
  7. Bake to Crisp: Bake the taquitos in the preheated oven for 15 to 20 minutes or until they turn golden brown and crispy. For extra crispiness, broil them for an additional 1 to 2 minutes at the end of baking.
  8. Serve: Serve the taquitos warm topped with chopped cilantro, sour cream, guacamole, and extra shredded cheese as desired.

Notes

  • Using rotisserie chicken saves time but leftover cooked chicken also works well.
  • Warming the tortillas before rolling prevents them from breaking.
  • Broiling at the end of baking adds extra crispiness; watch closely to prevent burning.
  • Customize the heat level by adjusting the salsa choice or adding more chili powder.
  • Both flour or corn tortillas can be used depending on your preference and dietary needs.
