This creamy baked double cheese and onion dip is a comforting, rich appetizer perfect for any gathering. Ingredients

Scale

Dip Ingredients

  • 8 ounces cream cheese, softened (light cream cheese is okay)
  • 1 cup mayonnaise, light is okay
  • 6 to 8 ounces grated cheese (such as Blarney Castle), divided (about 7 ounces used)
  • 1 medium/large sweet Vidalia onion, peeled and diced (about 1 heaping cup)
  • 1 teaspoon ground black pepper, or to taste
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon cayenne pepper, optional and to taste

Instructions

  1. Preheat Oven: Preheat your oven to 350°F. Lightly spray a 9-inch pie dish or a similar sized oven-safe baking dish with cooking spray to prevent sticking.
  2. Combine Ingredients: In a large mixing bowl, add the softened cream cheese, light mayonnaise, diced Vidalia onion, ground black pepper, salt, cayenne pepper (if using), and most of the grated cheese, reserving about 1/2 cup of cheese for topping. Stir until well combined.
  3. Transfer to Dish: Pour the mixture into the prepared baking dish. Use a spatula to smooth the top evenly for a uniform bake.
  4. Add Cheese Topping: Sprinkle the reserved 1/2 cup of grated cheese evenly over the top of the dip mixture to create a golden crust.
  5. Bake: Place the dish in the preheated oven and bake for 45 to 50 minutes until the top is golden brown, bubbly, and the dip is heated through. The recipe’s ideal baking time is around 47 minutes. Remove from oven and allow to cool slightly before serving.
  6. Serve: Enjoy warm with your choice of chips, bread, crackers, pita chips, or fresh vegetable sticks like carrots, celery, cucumber, zucchini, jicama, bell peppers, mushrooms, or enjoy by the spoonful.

Notes

  • Use light cream cheese and light mayonnaise for a lower-fat version without sacrificing flavor.
  • Adjust seasoning like salt, pepper, and cayenne pepper to match your taste preferences.
  • Make sure to use gluten-free products and verify labels if gluten sensitivity is a concern.
  • This dip is best served warm but can be reheated gently if needed.
  • Great for parties, game day, or as a fun, savory snack anytime.
