Ingredients
Scale
Pasta
- 20 oz cheese tortellini (Fresh or refrigerated)
Steak
- 1 lb steak (sirloin or ribeye)
- Salt, to taste
- Black pepper, to taste
- Garlic powder, to taste
- Smoked paprika, to taste
- 2 tbsp olive oil
Cream Sauce
- 4 tbsp butter
- 5 cloves garlic, minced
- 1 cup heavy cream
- 3/4 cup whole milk
- 1 1/4 cups parmesan cheese, shredded or freshly grated
Garnishes (Optional)
- Chopped parsley
- Red pepper flakes
- Cracked black pepper
Instructions
- Cook the Tortellini: Bring a large pot of salted water to a boil. Add the cheese tortellini and cook according to package instructions, about 3-5 minutes, until al dente. Drain well and set aside.
- Season and Sear the Steak: Heat olive oil in a large skillet over medium-high heat. Season the steak evenly with salt, black pepper, garlic powder, and smoked paprika. Sear the steak for about 3-5 minutes on each side until nicely browned but not fully cooked through. Remove steak from skillet and set aside.
- Prepare the Garlic Cream Sauce: In the same skillet, melt the butter over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant and lightly golden.
- Create the Cream Sauce: Pour in the heavy cream and whole milk, stirring continuously to combine. Let the mixture simmer gently for 3-4 minutes until it begins to thicken slightly.
- Incorporate the Cheese: Gradually whisk in the shredded parmesan cheese until it melts completely and the sauce is smooth and creamy. Adjust seasoning with salt and pepper if needed.
- Combine the Ingredients: Slice or chop the seared steak into bite-sized pieces and return it to the skillet along with the cooked tortellini. Toss everything together gently to coat the pasta and steak evenly in the cream sauce, cooking for an additional 2 minutes to heat through.
- Garnish and Serve: Remove from heat and garnish with chopped parsley, a sprinkle of cracked black pepper, and red pepper flakes if you desire some heat. Serve immediately to enjoy the creamy, flavorful dish at its best.
Notes
- Fresh tortellini is preferred for best texture but refrigerated works well too.
- Use sirloin for a leaner cut or ribeye for more tenderness and flavor.
- Adjust seasoning in the cream sauce according to taste.
- Optional garnishes add color and flavor contrast but can be omitted based on preference.
- Do not overcook the steak in the searing step; it will finish cooking when combined with the sauce.
