Description
These Pie Crust Cookies are a surprisingly simple and delicious treat made from store-bought pie crusts, cinnamon sugar, and butter. They offer a crisp, buttery texture with a sweet cinnamon flavor, perfect for a quick homemade dessert or snack.
Ingredients
Scale
Cookie Dough
- 2 pie crusts (1 package of 2 crusts)
- 2 tablespoons salted butter, melted
Cinnamon Sugar
- 1 cup white sugar, divided (1/2 cup + 1/2 cup)
- 1 teaspoon cinnamon (more if desired)
Instructions
- Get prepped: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper or a silicone baking mat. Melt the 2 tablespoons of salted butter.
- Make the cinnamon sugar: In a small bowl, combine half of the white sugar (1/2 cup) with 1 teaspoon cinnamon, mixing well.
- Prepare the pie crust: Unroll the two pie crusts carefully and smooth them out using a rolling pin for an even surface.
- Butter the crust: Brush the melted butter evenly over the entire surface of the pie crusts.
- Sprinkle cinnamon sugar: Generously sprinkle the cinnamon sugar mixture over the buttered dough, covering all areas.
- Roll the crust: Starting at one edge, roll the pie crust tightly into a log shape to ensure the cookies hold together when sliced.
- Slice the log: Using a sharp knife, cut the rolled log into evenly sized pieces and place them spaced slightly apart on the prepared baking sheet.
- Bake: Place the baking sheet in the preheated oven and bake for about 15 minutes. The cookies are done when the edges are lightly browned and the sugar on top is bubbling.
- Cool: Remove the cookies from the oven and allow them to cool completely on the baking sheet to firm up.
- Roll in sugar: Once cooled, roll each cookie in the remaining 1/2 cup of white sugar to give them a sweet, crystalline coating.
- Enjoy: Serve immediately and enjoy your crispy, cinnamon-sweet pie crust cookies.
