Ingredients

Scale

Muffin Batter

  • 2 cups all-purpose flour
  • ½ cup granulated sugar
  • 1 tbsp baking powder
  • ½ tsp salt
  • ¾ cup milk
  • ⅓ cup unsalted butter, melted
  • 1 large egg
  • 1 tsp vanilla extract

Cinnamon Swirl Filling

  • ⅓ cup brown sugar, packed
  • 1 tbsp ground cinnamon
  • 2 tbsp unsalted butter, melted

Vanilla Glaze

  • ½ cup powdered sugar
  • 1 tbsp milk
  • ½ tsp vanilla extract

Instructions

  1. Preheat and prepare muffin tin: Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease it lightly to prevent sticking.
  2. Mix dry ingredients: In a large bowl, whisk together all-purpose flour, granulated sugar, baking powder, and salt until well combined.
  3. Mix wet ingredients: In a separate bowl, whisk together milk, melted unsalted butter, egg, and vanilla extract until combined thoroughly.
  4. Combine batters: Pour the wet mixture into the dry ingredients and stir gently just until no streaks of flour remain; avoid overmixing to keep muffins tender and fluffy.
  5. Prepare cinnamon swirl: In a small bowl, mix together packed brown sugar, ground cinnamon, and melted butter to form the cinnamon filling.
  6. Assemble muffins: Spoon about 1 tablespoon of muffin batter into each muffin cup, then add a spoonful of the cinnamon mixture on top.
  7. Add remaining batter and swirl: Top each muffin cup with more batter until cups are about ¾ full. Use a toothpick or knife to gently swirl the cinnamon mixture into the batter, creating distinct ribbons.
  8. Bake: Place the muffin tin in the oven and bake for 15–18 minutes, until muffins turn golden brown and a toothpick inserted into the center comes out clean or with just a few moist crumbs.
  9. Prepare glaze: While the muffins cool slightly, whisk together powdered sugar, milk, and vanilla extract until smooth to form the vanilla glaze.
  10. Glaze and serve: Drizzle the vanilla glaze over the warm muffins and serve immediately for the best gooey, soft experience.

Notes

  • Do not overmix the batter to ensure soft and tender muffins.
  • Add chopped pecans or walnuts to the cinnamon swirl for added texture and flavor.
  • Store leftover muffins in an airtight container at room temperature for up to 3 days.
  • Warm muffins in the microwave for 10 seconds before serving to enhance freshness and gooey texture.
  • For longer storage, refrigerate for up to 5 days or freeze wrapped individually for up to 3 months.
  • Try adding diced apples or orange zest for seasonal flavor variations.
  • If cinnamon swirl sinks, toss cinnamon sugar mixture with a teaspoon of flour before adding.
