Ingredients
Scale
Batter
- 3 overripe bananas
- 4 tbsp melted vegan butter
- 3/4 cup maple syrup
- 1 cup almond or oat milk
- 1 tsp vanilla extract
- 1 1/2 cups all-purpose flour (regular or gluten-free)
- 1 cup rolled oats
Swirl mixture
- 1/3 cup light brown sugar
- 2 tbsp cinnamon
- Additional 1 tbsp melted vegan butter (for swirl mixture)
Instructions
- Preheat the oven: Set your oven to 350°F (175°C) and grease a loaf pan to prepare for baking.
- Mix wet ingredients: In a large bowl, mash the overripe bananas and combine with melted vegan butter, maple syrup, almond or oat milk, and vanilla extract. Stir until the mixture is smooth and fully blended.
- Combine dry ingredients: In a separate bowl, whisk together the all-purpose flour, rolled oats, baking powder, baking soda, cinnamon, and a pinch of salt. Gradually fold these dry ingredients into the wet mixture until just combined, being careful not to overmix.
- Prepare the cinnamon swirl: In a small bowl, mix 1 tbsp melted vegan butter with the light brown sugar and cinnamon until it forms a thick, spreadable consistency.
- Layer the batter: Pour half of the batter into the greased loaf pan. Drizzle half of the cinnamon swirl mixture over the batter. Add the remaining batter on top, then finish with the rest of the cinnamon swirl mixture. Use a knife to gently swirl the cinnamon mixture through the batter to create a marbled effect.
- Bake the bread: Place the loaf pan in the preheated oven and bake for about 45 minutes. Check doneness by inserting a toothpick into the center of the bread—it should come out clean.
- Cool and serve: Allow the banana bread to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely before slicing and enjoying.
Notes
- Use overripe bananas for the best natural sweetness and moisture.
- If you want a gluten-free version, be sure to use gluten-free all-purpose flour.
- Rolled oats add texture and heartiness to the bread; you can substitute with quick oats if needed.
- Adjust maple syrup amount based on your desired sweetness level.
- Store leftover banana bread in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
- For extra flavor, consider adding chopped walnuts or pecans to the batter before baking.
