Description

These Cinnamon Apple Cottage Cheese Bites are a nutritious and delicious breakfast or snack option, combining creamy cottage cheese, wholesome oats, and the natural sweetness of apples with warm cinnamon. Baked into bite-sized morsels, they are perfect for a quick energy boost or a healthy treat any time of day.

Ingredients

Scale

Wet Ingredients

  • 1 cup cottage cheese
  • 1/2 cup applesauce or 1 small grated apple
  • 1 large egg
  • 1 tbsp honey or maple syrup (optional, for added sweetness)

Dry Ingredients

  • 1 cup rolled oats
  • 1/2 tsp cinnamon
  • 1/2 tsp baking powder
  • Pinch of salt

Instructions

  1. Preheat Oven and Prepare Pan: Preheat your oven to 350°F (175°C). Grease a mini muffin pan or line it with mini muffin liners to prevent sticking.
  2. Mix Ingredients: In a mixing bowl, combine the cottage cheese, rolled oats, applesauce or grated apple, egg, cinnamon, honey or maple syrup (if using), baking powder, and a pinch of salt. Stir thoroughly until the mixture is well incorporated.
  3. Let Batter Rest: Allow the batter to sit for about 5 minutes. This resting time lets the oats absorb moisture, resulting in a better texture.
  4. Fill Muffin Cups: Scoop the batter evenly into the prepared mini muffin pan, filling each cup nearly to the top to ensure good-sized bites.
  5. Bake: Place the pan in the preheated oven and bake for 18–20 minutes, or until the bites are set and have a light golden color on top.
  6. Cool: Remove the pan from the oven and let the bites cool in the pan for a few minutes. Then transfer them to a wire rack to cool completely.
  7. Serve or Store: Enjoy these bites warm or store them in the refrigerator in an airtight container for up to 4 days.

Notes

  • For a vegan option, substitute the egg with a flax egg and use plant-based cottage cheese alternatives.
  • These bites can be frozen for up to 2 months; thaw overnight in the fridge before consuming.
  • Add chopped nuts or raisins for extra texture and flavor.
  • Use fresh grated apple instead of applesauce for a chunkier texture.
  • Adjust cinnamon and sweetness according to your taste preference.
