Ingredients
Scale
For the Chicken
- 2 boneless skinless chicken breasts
- Salt and pepper to taste
- 1 tablespoon olive oil
For the Sandwich
- 1 avocado, sliced
- 4 slices of your favorite cheese (Swiss, cheddar, or provolone)
- 4 slices of bread (sourdough, ciabatta, or your choice)
- 2 tablespoons mayonnaise
- 1 tablespoon Dijon mustard
- 1 small red onion, thinly sliced
- 1 tomato, sliced
- Butter or olive oil for grilling the sandwiches
Instructions
- Season the Chicken: Season both sides of the chicken breasts evenly with salt and pepper to enhance flavor before cooking.
- Heat the Skillet: Place a skillet over medium-high heat and add 1 tablespoon of olive oil, allowing it to warm up for cooking the chicken.
- Cook the Chicken: Cook the chicken breasts in the skillet for 6-7 minutes per side or until fully cooked through with no pink remaining in the center. Remove the chicken from the skillet and let it rest for a few minutes to retain juices before slicing thinly.
- Prepare Avocado and Cheese: While the chicken rests, slice the avocado and prepare your choice of cheese slices. Set these aside for assembling the sandwiches.
- Spread the Bread: Spread a thin, even layer of mayonnaise and Dijon mustard on each slice of bread to add moisture and flavor.
- Assemble the Sandwiches: On two slices of the prepared bread, layer the sliced chicken, avocado slices, and cheese. Add thin slices of red onion and tomato on top for freshness and texture.
- Top the Sandwiches: Place the remaining bread slices on top, mayo side down, to complete the sandwich assembly.
- Heat for Grilling: Warm a skillet or grill pan over medium heat and add a small amount of butter or olive oil to prevent sticking and help create a golden crust.
- Grill the Sandwiches: Place the sandwiches in the heated skillet and cook for about 3-4 minutes on each side until the bread is golden brown and the cheese inside has melted, pressing gently with a spatula to ensure even melting.
- Serve: Remove the sandwiches from the skillet and allow them to rest for a minute before slicing in half. Serve warm to enjoy gooey cheese and fresh flavors.
