  • Author: Zoe
  • Total Time: 25 minutes
  • Yield: 2 sandwiches 1x

Description

A hearty and flavorful Chicken Avocado Melt Sandwich featuring tender grilled chicken breasts, creamy avocado slices, melted cheese, and fresh veggies all packed between toasted bread with a zesty mayo and Dijon mustard spread for a satisfying meal.

Ingredients

Scale

For the Chicken

  • 2 boneless skinless chicken breasts
  • Salt and pepper to taste
  • 1 tablespoon olive oil

For the Sandwich

  • 1 avocado, sliced
  • 4 slices of your favorite cheese (Swiss, cheddar, or provolone)
  • 4 slices of bread (sourdough, ciabatta, or your choice)
  • 2 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 small red onion, thinly sliced
  • 1 tomato, sliced
  • Butter or olive oil for grilling the sandwiches

Instructions

  1. Season the Chicken: Season both sides of the chicken breasts evenly with salt and pepper to enhance flavor before cooking.
  2. Heat the Skillet: Place a skillet over medium-high heat and add 1 tablespoon of olive oil, allowing it to warm up for cooking the chicken.
  3. Cook the Chicken: Cook the chicken breasts in the skillet for 6-7 minutes per side or until fully cooked through with no pink remaining in the center. Remove the chicken from the skillet and let it rest for a few minutes to retain juices before slicing thinly.
  4. Prepare Avocado and Cheese: While the chicken rests, slice the avocado and prepare your choice of cheese slices. Set these aside for assembling the sandwiches.
  5. Spread the Bread: Spread a thin, even layer of mayonnaise and Dijon mustard on each slice of bread to add moisture and flavor.
  6. Assemble the Sandwiches: On two slices of the prepared bread, layer the sliced chicken, avocado slices, and cheese. Add thin slices of red onion and tomato on top for freshness and texture.
  7. Top the Sandwiches: Place the remaining bread slices on top, mayo side down, to complete the sandwich assembly.
  8. Heat for Grilling: Warm a skillet or grill pan over medium heat and add a small amount of butter or olive oil to prevent sticking and help create a golden crust.
  9. Grill the Sandwiches: Place the sandwiches in the heated skillet and cook for about 3-4 minutes on each side until the bread is golden brown and the cheese inside has melted, pressing gently with a spatula to ensure even melting.
  10. Serve: Remove the sandwiches from the skillet and allow them to rest for a minute before slicing in half. Serve warm to enjoy gooey cheese and fresh flavors.

  • Ensure chicken is fully cooked to an internal temperature of 165°F (74°C) for safety.
