Cheese Mixture:

  • 200 grams (7 ounces) cheese, sliced

Herb Mixture:

  • 2 tbsp fresh rosemary, chopped
  • 2 tbsp fresh parsley, chopped
  • 1 tsp dried oregano
  • 1/2 tsp dried thyme
  • 2 garlic cloves, crushed
  • 3 tbsp extra virgin olive oil
  • 1/2 tsp cooking salt

Bread:

  • 2 1/4 cups plain flour
  • 1 tsp baking soda
  • 3/4 tsp cooking salt
  • 1/2 cup plain yogurt
  • 3/4 cup full-fat milk
  • 2 large eggs
  • 50g unsalted butter, melted
  • 2 tbsp olive oil
  • 2 small garlic cloves, crushed

Instructions

  1. Preheat Oven: Preheat oven to 180°C (350°F) and grease a loaf pan.
  2. Prepare Herbs: Combine rosemary, parsley, oregano, thyme, garlic, olive oil, and salt.
  3. Mix Dry Ingredients: Whisk flour, baking soda, and salt in a bowl.
  4. Combine Wet Ingredients: Whisk yogurt, milk, eggs, butter, olive oil, and garlic in another bowl.
  5. Combine Batter: Mix wet ingredients into dry until just combined.
  6. Layer Batter: Alternate batter, herb mixture, and cheese in the loaf pan.
  7. Bake: Bake for 30 mins, then cover with foil and bake for another 20 mins.
  8. Cool and Serve: Cool in the pan, then slice and serve.

Notes

  • For a rustic appearance, slice cheese into varying widths.
  • Adjust salt if using fine table salt instead of kosher salt.
  • Line the loaf pan with parchment paper for easy removal.
