Herb Mixture:

- 1/2 tsp dried thyme
- 2 garlic cloves, crushed
- 3 tbsp extra virgin olive oil
- 1/2 tsp cooking salt
Bread:
- 2 1/4 cups plain flour
- 1 tsp baking soda
- 3/4 tsp cooking salt
- 1/2 cup plain yogurt
- 3/4 cup full-fat milk
- 2 large eggs
- 50g unsalted butter, melted
- 2 tbsp olive oil
- 2 small garlic cloves, crushed
Instructions
- Preheat Oven: Preheat oven to 180°C (350°F) and grease a loaf pan.
- Prepare Herbs: Combine rosemary, parsley, oregano, thyme, garlic, olive oil, and salt.
- Mix Dry Ingredients: Whisk flour, baking soda, and salt in a bowl.
- Combine Wet Ingredients: Whisk yogurt, milk, eggs, butter, olive oil, and garlic in another bowl.
- Combine Batter: Mix wet ingredients into dry until just combined.
- Layer Batter: Alternate batter, herb mixture, and cheese in the loaf pan.
- Bake: Bake for 30 mins, then cover with foil and bake for another 20 mins.
- Cool and Serve: Cool in the pan, then slice and serve.
Notes
- For a rustic appearance, slice cheese into varying widths.
- Adjust salt if using fine table salt instead of kosher salt.
- Line the loaf pan with parchment paper for easy removal.
