  • 2 packages (16 oz each) milk chocolate, melted

Creme Filling

  • 1 cup light corn syrup
  • 1/2 cup butter, softened
  • 2 tsp vanilla extract
  • 6 cups powdered sugar
  • 1/2 tsp salt
  • 2 Tbsp milk
  • 2 drops orange gel food coloring
  • 1 drop yellow gel food coloring

Instructions

  1. Prepare muffin cups: Line 48 mini muffin cups with parchment paper liners to ensure easy removal of the finished bites.
  2. Melt first portion of chocolate: In a microwave-safe bowl, microwave 16 ounces of milk chocolate on HIGH for 30 seconds. Stir well, then continue melting in 20-second increments until smooth.
  3. Form chocolate base: Pour melted chocolate into a piping bag, snip off the tip, and pipe a thin layer into the bottom of each paper liner. Tap the pan gently to distribute the chocolate evenly. Save any extra for re-melting.
  4. Make the creme mixture: In the bowl of a stand mixer, beat butter and light corn syrup together until creamy. Add milk, vanilla extract, and salt. Slowly add powdered sugar, mixing well after each addition until mixture becomes stiff.
  5. Color creme filling: Divide the creme mixture. Place two-thirds of the mixture into one piping bag. Add orange and yellow gel food coloring to the remaining third and mix well until the creme reaches a consistent orange color. Fill a separate piping bag with the colored creme.
  6. Pipe white creme layer: Cut the tip off the white creme bag to create a 1/2-inch opening and pipe a thick layer on top of the chocolate layer in each liner.
  7. Pipe orange creme layer: Cut the tip off the orange creme bag to create a 1/4-inch opening and pipe the orange creme onto the center of the white creme layer. Tap the pan to smooth the layers. Allow the creme to settle for smoother texture.
  8. Melt second portion of chocolate: Re-melt the remaining 16 ounces of milk chocolate in the microwave until smooth.
  9. Top with chocolate layer: Pipe the melted chocolate over the creme layers, ensuring full coverage to the edges. Tap the pan gently to smooth the top.
  10. Set chocolate: Refrigerate the pan for 30 minutes until chocolate is completely set and firm.
