Description

This Brownie Refrigerator Cake is a delicious no-bake dessert featuring a fudgy brownie base topped with a creamy cream cheese layer, luscious chocolate and vanilla pudding, and a fluffy whipped topping, garnished with chocolate shavings or syrup. Perfectly chilled, it offers a rich and indulgent treat for any occasion.

Ingredients

Scale

Brownie Base

  • 1 brownie mix (9×13 pan size)
  • 1 additional extra-large egg

Cream Cheese Layer

  • 1 package cream cheese (8 oz), softened
  • 1 cup powdered sugar
  • 1 container whipped topping (8 oz)

Pudding Layer

  • 1 package chocolate instant pudding (3 oz)
  • 1 package vanilla instant pudding (3 oz)
  • 3 1/2 cups milk

Topping and Garnish

  • 1 container whipped topping (8 oz)
  • 1 Hershey bar (for shavings) or chocolate syrup

Instructions

  1. Prepare the Brownies: Prepare the brownies according to the package directions, adding an extra large egg to achieve a fudgier texture. Bake as instructed, then let cool completely in the pan.
  2. Make the Cream Cheese Layer: In a mixing bowl, blend softened cream cheese with powdered sugar until smooth. Fold in one container of whipped topping gently until combined. Spread this mixture evenly over the cooled brownie layer.
  3. Prepare the Pudding Layer: In a separate bowl, whisk together the chocolate and vanilla instant pudding mixes with 3 1/2 cups of milk until the puddings thicken, about 2 minutes. Spread the pudding layer over the cream cheese layer evenly.
  4. Add the Whipped Topping: Spread the remaining container of whipped topping evenly over the pudding layer to create a light and fluffy top.
  5. Garnish and Chill: Garnish the top with chocolate shavings made from a Hershey bar or drizzle chocolate syrup. Refrigerate the entire cake for at least 2 hours to set before serving.

Notes

  • For best results, ensure the brownies are completely cooled before layering to prevent melting the cream cheese or pudding layers.
  • You can substitute the brownie mix with homemade brownies if preferred.
  • If you want a richer pudding flavor, use whole milk instead of low-fat milk.
  • Make the chocolate shavings by using a vegetable peeler on a cold chocolate bar for best texture.
  • This cake can be made a day ahead and refrigerated for convenience.
