- 1 cup rolled oats (90g)
- ¼ cup cocoa powder (25g), natural unsweetened
- ½ cup chocolate protein powder (50g), optional
- 1 tablespoon chia seeds or flaxseed meal
- Pinch of salt
Wet Ingredients
- ½ cup natural peanut butter (125g), unsweetened and unsalted
- ⅓ cup honey or maple syrup (80ml)
- 1 teaspoon vanilla extract
Optional Add-ins
- ¼ cup mini dark chocolate chips (45g), optional
Instructions
- Mix the dry ingredients: In a large mixing bowl, combine rolled oats, cocoa powder, protein powder, chia seeds, and a pinch of salt. Stir until evenly distributed.
- Combine the wet ingredients: Add peanut butter, honey or maple syrup, and vanilla extract to the dry mix. Mix with a spatula until crumbly but combined.
- Adjust texture: Fold in mini dark chocolate chips. If the mixture is too dry, add water or almond milk teaspoon by teaspoon until sticky enough to hold shape.
- Shape the bites: Scoop tablespoon-sized portions and roll into balls. Place on a baking sheet or plate lined with parchment paper.
- Chill and enjoy: Refrigerate for at least 30 minutes to firm up. For quicker chilling, freeze for 15 minutes.
Notes
- For a vegan version, substitute honey with maple syrup.
- You can customize the protein powder to your preferred flavor or skip it if desired.
- These bites can be stored in the refrigerator for up to one week.
- If you prefer a crunchier texture, toast the oats lightly before mixing.
- Add a pinch of cinnamon or espresso powder for an extra flavor twist.
