Instructions

  1. Mix Batter: In one bowl, combine all dry ingredients (flour, sugar, baking powder, and salt). In another bowl, whisk together the wet ingredients (milk, eggs, melted butter, and vanilla extract). Gradually pour the wet ingredients into the dry ingredients and mix gently until just combined to avoid overmixing. Fold in any optional mix-ins if using.
  2. Fill Tin: Preheat your oven to 375°F (190°C). Grease a mini muffin tin to prevent sticking. Using a spoon or small scoop, fill each muffin cavity about three-quarters full with the pancake batter.
  3. Bake: Place the filled muffin tin in the preheated oven and bake for 12 to 15 minutes. The pancake poppers are done when they are golden brown and a toothpick inserted into the center comes out clean.
  4. Cool: Remove the muffin tin from the oven and let the pancake poppers rest for 5 minutes to set before carefully removing them from the tin.
