Blueberry Cinnamon Roll Casserole Recipe

  • Author: Zoe
  • Total Time: 55 minutes
  • Yield: 8 servings 1x

Description

This Blueberry Cinnamon Roll Casserole is a delightful twist on traditional cinnamon rolls, combining soft, gooey cinnamon roll pieces with fresh blueberries baked into a creamy, custard-like base. Perfect for a comforting breakfast or brunch, it’s topped with a sweet icing drizzle that adds an extra layer of indulgence.

Ingredients

Scale

Casserole

  • 2 cans (8-count) cinnamon rolls, cut into quarters (icing reserved)
  • 1 cup fresh or frozen blueberries
  • 4 large eggs
  • 1/2 cup (120ml) milk
  • 1/4 cup (50g) granulated sugar
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon

Optional Add-ins

  • 1 tsp lemon zest (optional, for a tangy twist)
  • 2 oz cream cheese, cut into cubes (optional, adds creaminess)

Instructions

  1. Preheat Oven and Prepare Dish: Preheat your oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish to ensure the casserole doesn’t stick.
  2. Arrange Cinnamon Rolls and Blueberries: Cut the cinnamon rolls into quarters and spread them evenly in the prepared baking dish. Sprinkle fresh or frozen blueberries evenly over the cinnamon roll pieces.
  3. Mix Custard: In a mixing bowl, whisk together the eggs, milk, granulated sugar, vanilla extract, and cinnamon until well combined. If using, gently fold in lemon zest or cream cheese cubes for additional flavor and texture.
  4. Pour Custard and Bake: Pour the egg mixture evenly over the cinnamon rolls and blueberries in the dish. Bake uncovered for 35 to 40 minutes or until the casserole is golden brown on top and the custard has set firmly.
  5. Drizzle Icing: While the casserole is still warm, warm the reserved cinnamon roll icing slightly to make it drizzle-friendly. Drizzle over the top of the casserole for added sweetness. Optionally, dust with powdered sugar or add maple syrup if desired. Serve warm.

Notes

  • For best results, thaw frozen blueberries before assembling.
  • Adding lemon zest gives a bright, fresh flavor that balances the sweetness.
  • Cream cheese cubes add richness and a slight tang to the dish.
  • Use the icing sparingly if you prefer a less sweet casserole.
  • Leftovers can be refrigerated and reheated gently in the microwave.
  • Substitute milk with any plant-based milk for a dairy-free version.
