Ingredients
Scale
For the Chicken
- Cooking oil of choice (2 tablespoons)
- 1 pound boneless, skinless chicken thighs (or chicken breasts)
- Kosher salt (to taste)
- Black pepper (to taste)
- BBQ seasoning blend (1 teaspoon)
- 3 tablespoons BBQ sauce
- 2 tablespoons hot honey
For the Quesadillas
- 4 large burrito size flour tortillas
- 3 cups shredded cheese of choice (such as a blend of Monterey Jack and cheddar)
- 1/2 cup chopped cilantro (optional)
- Additional BBQ sauce and hot honey for drizzling
Optional Toppings
- Sour cream (for serving)
- Jalapenos (sliced, for serving)
Instructions
- Preheat and Cook Chicken: Preheat your griddle to medium heat and add the cooking oil. Season the chicken thighs with kosher salt, pepper, and BBQ seasoning blend. Place them on the griddle and cook for about 6 minutes, stirring and flipping occasionally to ensure even cooking.
- Add Flavors: Pour the BBQ sauce and hot honey over the chicken, stirring well to coat. Continue cooking for an additional 2 minutes so the flavors meld together. Remove the chicken from the griddle, scrape it clean, and reduce the heat to medium-low.
- Prepare Quesadillas: Add a bit more oil to the griddle and lay the tortillas flat. On half of each tortilla, sprinkle half of the shredded cheese. Layer the cooked chicken on top, then drizzle with extra BBQ sauce and hot honey. Add chopped cilantro if desired, then top with the remaining shredded cheese.
- Cook Quesadillas: Fold the empty side of each tortilla over the filling. Cook for 1–2 minutes on each side until the cheese is melted and the tortilla is crisp and golden brown according to your preference.
- Serve: Remove quesadillas from the griddle and slice into portions. Serve warm with optional sour cream and sliced jalapenos for extra flavor and heat.
Notes
- Use chicken breasts if you prefer leaner meat, but thighs provide more flavor and juiciness.
- Adjust the amount of hot honey to control the heat level.
- For a gluten-free variation, substitute flour tortillas with gluten-free tortillas.
- Feel free to use a mix of cheeses that melt well such as mozzarella, monterey jack, or cheddar.
- To save time, use pre-cooked shredded chicken tossed in hot honey BBQ sauce instead of cooking from raw.
