Description

This Blackstone Hot Honey BBQ Chicken Quesadillas recipe combines smoky BBQ seasoned chicken with the sweet and spicy kick of hot honey, layered between melted cheese and warm flour tortillas. Perfect for a quick weeknight meal or a flavorful snack, these quesadillas are crispy on the outside and loaded with savory, sweet, and spicy flavors inside.

Ingredients

Scale

Chicken and Sauce

  • 1 pound boneless, skinless chicken thighs or chicken breasts
  • Cooking oil of choice (such as vegetable or canola oil)
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste
  • BBQ seasoning blend, to taste
  • 3 tablespoons BBQ sauce (plus more for drizzling)
  • 2 tablespoons hot honey (plus more for drizzling)

Quesadilla Assembly

  • 4 large burrito size flour tortillas
  • 3 cups shredded cheese of choice (cheddar, Monterey Jack, or a blend)
  • 1/2 cup chopped cilantro (optional)
  • Optional toppings: sour cream, sliced jalapeños

Instructions

  1. Preheat and Cook Chicken: Preheat your griddle or large skillet to medium heat. Add a splash of cooking oil to coat the surface. Season the chicken thighs or breasts with kosher salt, pepper, and BBQ seasoning blend. Place the chicken on the griddle and cook for about 6 minutes, stirring occasionally with spatulas to ensure even cooking.
  2. Add Sauces and Finish Chicken: Pour in 3 tablespoons of BBQ sauce and 2 tablespoons of hot honey over the chicken. Stir everything together and cook for an additional 2 minutes so the flavors meld. Remove the chicken from the griddle and clean the surface. Lower heat to medium-low.
  3. Assemble Quesadillas on Griddle: Add a little more cooking oil to the griddle and lay each flour tortilla flat. Sprinkle half of the shredded cheese evenly over one half of each tortilla. Layer the cooked chicken on top, drizzle a bit more BBQ sauce and hot honey over the chicken, and if using, add chopped cilantro. Top with the remaining cheese.
  4. Cook and Fold Quesadillas: Fold the empty side of each tortilla over the filled half to form a half-moon shape. Cook each quesadilla for 1-2 minutes per side until the cheese melts completely and the tortillas are golden and crispy to your liking.
  5. Serve: Remove the quesadillas from the griddle. Slice into wedges and serve immediately with optional sour cream and sliced jalapeños on the side for extra flavor and heat.

Notes

  • You can substitute chicken breasts with thighs for a juicier texture, or vice versa for a leaner option.
  • Adjust the amount of hot honey according to your desired spice level.
  • Use your favorite BBQ seasoning blend or create your own with smoked paprika, garlic powder, onion powder, and chili powder.
  • For gluten-free options, substitute flour tortillas with gluten-free tortillas.
  • Serve with a side of salsa or guacamole for additional flavor.
