For the Sweet Potatoes:

  • 56 medium sweet potatoes, peeled & cut into thin medallions

For the Sauce:

  • ¼ cup unsalted butter
  • ¼ cup brown sugar (light or dark)
  • ½ cup water
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground cloves
  • 1 teaspoon ground nutmeg
  • ¼ teaspoon salt

Toppings:

  • ¼ cup chopped pecans or walnuts
  • ½ cup mini marshmallows

Instructions

  1. Preheat oven to 400°F.
  2. Peel sweet potatoes, cut them into thin medallions, and arrange them in your baking dish.

  3. In a saucepan, combine unsalted butter, brown sugar, water, spices, and salt.
  4. Heat on medium, stirring until melted. Brush ¾ of the sauce over sweet potatoes, cover with foil, and bake for 45-50 minutes.

  5. Remove dish from oven, uncover, and add remaining sauce, pecans, and marshmallows.
  6. Broil for 1-2 minutes until marshmallows are toasted.

  7. Allow to cool, then serve and enjoy!
