  • 2 medium apples, peeled, cored & diced (mix of tart & sweet)
  • 1/3 cup (67g) brown sugar
  • 1 tsp ground cinnamon

For the Glaze:

  • 1/2 cup (60g) powdered sugar
  • 12 tbsp milk
  • 1/4 tsp vanilla extract

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan with parchment paper for easy removal.
  2. Prepare Cinnamon-Apple Mixture: In a medium bowl, toss the diced apples with brown sugar and ground cinnamon until evenly coated. Set this aside to develop flavor.
  3. Cream Butter and Sugar: In a large mixing bowl, beat the softened butter and granulated sugar together until the mixture is light and fluffy, typically about 3-4 minutes using an electric mixer.
  4. Add Eggs and Vanilla: Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next. Then stir in the vanilla extract.
  5. Mix Dry Ingredients: In a separate bowl, whisk together the all-purpose flour and baking powder. Gradually add these dry ingredients to the butter mixture, alternating with the milk, beginning and ending with the dry ingredients. Mix just until combined to keep the batter tender.
  6. Assemble the Loaf: Pour half of the batter into the prepared loaf pan. Spoon half of the cinnamon-apple mixture evenly over the batter. Repeat with remaining batter and apples. Use a knife to gently swirl the apples into the batter for a marbled effect.
